L'exquis au Comtomme

Seaworthy Comtomme cheese


    60 ml (1/4 cup) Comtomme cheese, grated
    60 ml (1/4 cup) cooked lobster, cut in cubes
    1 mango, peeled and cut in cubes
    15 ml (1 tbsp.) red onion, finely chopped
    15 ml (1 tbsp.) fresh basil, finely chopped
    15 ml (1 tbsp.) mayonnaise
    Zest and juice of 1/2 lime
    Salt and freshly ground pepper
    Bread chosen: Brioche roll


    In a bowl, mix the lobster, mango, red onion, basil, mayonnaise, lime zest and juice and cheese together. Add salt and pepper.
    Slice the roll open.
    Spread the lobster salad and close the roll.
