Blue Cheese-Style Sauce Without Blue

INGRÉDIENTS :

    1 tbsp salted butter
    1 onion, thinly sliced
    ⅓ cup white wine
    1 ½ cups 15% cooking cream
    1 tsp dried chives
    1 tsp garlic powder
    1 tsp onion powder
    ½ tsp black pepper
    1 tsp salt
    200 g Fabrication Spéciale cheese, cut into pieces
    ¼ cup finely chopped parsley

PRÉPARATION :

    In a small saucepan, melt the butter.

    Add the onions and sweat over low heat for 5 minutes, or until translucent.

    Deglaze with the white wine and let reduce until almost dry.

    Add the cream, dried chives, garlic powder, onion powder, black pepper and salt. Heat until the cream is warm, without bringing it to a boil.

    Add the pieces of Fabrication Spéciale cheese and stir until melted.

    Add the fresh parsley and serve immediately with Buffalo chicken wings, steak or escargots.
