This cheese is named after a nearby road to the farm “Chemin du Brûlé,” referring to the line of vegetable ash in the center of its paste.
It is a semi-hard farmhouse cheese (uncooked pressed paste) certified organic. It is aged for 2 to 6 months on spruce boards from the region.
Its crust is reddish-orange, giving off a scent of fruits and mushrooms. The Chemin du Brûlé stands out for its soft, smooth, and melting texture with some round openings. It presents multiple flavors such as fresh hazelnut, butter, and animal (beef broth).
